A unique location in Szeged: a townhouse in the city centre conceals this hidden gem. And a unique concept too: a new menu is concocted every three weeks, always with eight courses, shaped by the chef’s evolving inspiration. This is no ad-hoc improvisation — elements are preserved and planned far in advance, some tucked away at the height of summer, destined to reappear in the flavours of a deep autumn or winter feast. Alkimista is the vision of Krisztina Katkó, a former financial journalist who has forged a strikingly authentic path into gastronomy. Her distinctive style permeates the entire experience. Even the menu titles read like poetry — "Wild, Smoke, Ash – the Last Long Walks through the Borderlands” — and each dish name continues the tale: "Frozen Meadow", "Silent Backwater", "Picnic on an Abandoned Clearing". Katkó herself visits the tables to talk with guests, then vanishes back into the kitchen to plate the next course. It’s a one-woman show in the noblest sense — deeply personal, never theatrical. Meanwhile, the head waiter presents the drinks: thoughtful, expressive pairings that include not only natural wines, but also cider, craft beer and fermented juices, each selected to mirror the emotional tone of the food. Dinner lasts about three hours, yet never drags. Guests are absorbed from start to finish, and by the end, the only question is how soon they can return. Without a reservation, there’s no point trying — the handful of tables book out far in advance. Every detail of this extraordinary experience bears the mark of a chef who delights in what she does. Her dedication, expertise and perfectionism are unmistakable — and the warmth with which she greets each guest is the truest testament to the joy she pours into her craft.
