The restaurant’s full name – Essência Restaurant - Tiago & Éva – tells the story of kindred spirits joined in life and work. Éva Sabarigo brings a wealth of experience in hotel hospitality, while chef Tiago Sabarigo brings the fine dining. Since 2020, the couple has welcomed guests to their Portuguese–Hungarian fusion restaurant on Sas Street. Given how rare Portuguese cuisine is in Hungary, the concept alone sparks curiosity. Exposed brick walls, arched ceilings and blue-and-white azulejo tiles evoke Mediterranean elegance, while the dining area radiates rustic charm. The open kitchen at the heart of the room is a bold choice, an emblem of confidence and transparency. Tables in the central section are close to the action, while those tucked into cosy booths offer a more intimate experience. Though attentive professionalism infuses the team’s work, Essência remains a warm, welcoming place. At lunch, guests can choose between a tasting menu and à la carte dishes; for dinner, a five- or seven-course culinary journey awaits. While the overall spirit leans Portuguese, the kitchen makes generous overtures to Hungarian cuisine and the country’s outstanding ingredients. A dish of octopus, leek and ink might be followed by quail paprika stew. The octopus – tender yet with a perfect snap – shows exactly why it has become the chef’s signature: a vivid and compelling taste of the sea. The quail dish nods whimsically to classic Hungarian chicken paprika stew, with an unforgettable sauce and flawlessly textured meat. For dessert, the Portuguese cousin of tiramisù, bolo de bolacha, arrives playfully disguised as a plump little starfish. Witty, creative, sublime. The wine list draws on an excellent selection of Hungarian, Portuguese and international labels – so best leave the car at home. Even the non-alcoholic pairings are crafted with care. Tiago Sabarigo has called Hungary home since 2015. His presence, and perfectionism, have enriched the country’s culinary scene immeasurably.
