One of Hungary’s most celebrated restaurants, Pajta in Őriszentpéter, has entered a bold new chapter. After years of steady success, owners and founders Flóra Marjai and Ferenc Kvasznicza brought in a new head chef in spring 2023: István Akács, whose experience spans the kitchens of top Hungarian restaurants as well as acclaimed Nordic destinations. He returned to Hungary from Mexico — bringing not only new flavours but also a professional partner, Yazmin Salazar, who now oversees both service and meat preparation. Pajta continues to grow organically, both in name and spirit. It’s now a full retreat, complete with minimalist, sky-facing Kástu cabins, designed by renowned architect Gábor U. Nagy, who also created the restaurant building. Pajta has become more than a restaurant – it’s a way of life, a philosophy: a refined step away from the rhythms of the city, where contemporary architecture meets a contemporary. During our visit, it was Ferenc himself who greeted us, welcome drink in hand, and his thoughtful presence was a constant throughout the meal. Chef István also popped in to meet guests. Diners choose from a range of menus, from three to nine courses. The dish entitled “trout, asparagus, hollandaise, buckwheat” was a celebration of the region, the season, and the chef’s technical finesse. Perfectly cooked fish was flanked by snappy spears of green and white asparagus, bathed in a velvety sauce. Dessert came in the form of a dreamily creamy floating island – its subtle sweetness supplemented by a swirl of rich hazelnut cream lining the plate. With no local winery to lean on, the wine and sparkling list casts a broader net, with thoughtful selections from both Hungary and abroad. The sommelier was intuitive and discreet, guiding us through pairings with a gentle hand. Arrive unhurried, for at Pajta, time seems to move more slowly— and in its gentler rhythm, true tranquillity takes root.
