Babel’s story began in 2008, with its most recent chapter starting in 2022. Housed in a neobaroque building on Piarista Lane, the fine dining space transforms grandeur into minimal sophistication. Top-quality wood and fabrics, cool concrete, mirrored surfaces, and carefully calibrated lighting define the 40-seat space and its atmosphere. Thanks to the interior design choices, the overall effect is distinctly modern, yet it retains a sense of warmth and intimacy – a rare achievement in this fine dining category. The richness of detail is further enhanced by crystal glassware and bespoke ceramic plates, on which every dish feels like a celebration. A few years ago, owner Hubert Hlatky-Schlichter brought in Daniel Berlin, one of Sweden’s most celebrated chefs, as a consultant. Meanwhile, the kitchen is led by executive chef Kornél Kaszás. The team, both front and back of house, is strikingly young, infusing the restaurant with an unfiltered energy that pushes it forward. Their culinary philosophy is ingredient-focused, rooted in regional produce but open to international influences, something they embrace with pride. Guests can choose between 8- and 13-course tasting menus, with a full vegan option and thoughtful accommodations for dietary restrictions – a rare and welcome gesture at this level of dining. The wine and champagne list is outstanding, curated by head sommelier János Fogarasi-Frank. Each dish is executed with technical precision and artistic flair, often playing with texture, temperature, and contrast. The warm-cold, silky foie gras course is a sensual indulgence; a reinterpretation of deviled eggs floats in a cloud of egg foam, topped with French sturgeon caviar, elevating a nostalgic cold platter staple into fine dining art. Babel is not the first high-end restaurant to turn layered potato into an icon, but here it shines as one of the most poignant expressions of contemporary Hungarian cuisine. A trio of brioche, butter and pumpkin slips effortlessly into the flow of the menu, followed by a matured beef dish with mushrooms and cornelian cherry jus—shaved truffle falling onto the plate tableside. The crust is flawless, the meat tender and melting, with the jus's acidity providing a clean, bright finish. For dessert: chocolate, blackcurrant, and caviar – an unexpectedly bold and elegant farewell. Babel has already gone through several rebirths, but today it feels more vibrant, more relevant than ever.
