Once counted among Hungary’s foremost fine dining addresses, the old Onyx closed its doors in 2020. Its rebirth was anything but conventional – a series of bold, genre-blurring performances that punctured the fine dining bubble and drew even the national press into its orbit. With this audacious shift, the team embraced a progressive path, and on Vörösmarty Square, beside the venerable Gerbeaud, they founded an experimental workshop: a culinary atelier defined not by hierarchy, but by Onyx Creative Community led in everyday life by chef Bence Domoszlai. Forget all preconceptions before stepping inside. Guests sit together around a single large table, with dishes served to everyone simultaneously. One side of the table is flanked by a kitchen counter where the plates are finished; on the other, bookshelves and a reading nook – guests are free to rise, move around, and explore. The evening unfolds as an experience that transcends dining: the values of sustainability, shared creation and conscious reflection – the worldview of Onyx – are woven into every detail. You can opt for four, five or six courses. Each dish bears a single, evocative name, transforming the meal into a voyage through stations rather than a sequence of conventional plates. ConcreteJungle evokes urbanism, starring pigeon – a noble Hungarian ingredient. Globe is a dessert where a delicate shell stained grey with vegetable ash shatters to reveal a chilled parfait, its depth and density drawn from molasses. Texture, temperature, and taste entwine in a virtuosic dance. The bespoke tableware, designed in collaboration with the University of Art & Design, amplifies the storytelling. With a few cross-border exceptions, the wines are regional – premium selections chosen with discernment with an intriguing range of fruit spirits to boot. For an experience of this calibre, the menu is impressively well priced. This may not be the dream venue for a romantic dinner – but for discerning gastronomes and the young at heart, it offers a truly unique séance for the palate.
