For years now, SALT has stood among Hungary’s finest restaurants. In no time at all, it became a touchstone of contemporary Hungarian gastronomy. Chef Szilárd Tóth’s journey is one of the most compelling in the country: a modest yet purposeful ascent from Mátészalka to the helm of a Michelin-starred kitchen – and one senses the story has only just begun. Housed on the ground floor of Hotel Rum in central Budapest, SALT conjures culinary theatre but it’s never pushy or overblown. It’s a performance of intricate subtlety, where calm, almost homely hospitality meets the aesthetics of a cutting-edge open kitchen and the echoes of grandma’s pantry. From arrival to final farewell, the service is pitch perfect. On our visit, the 14-course tasting menu was accompanied by a choice of three wine pairings – local, European or classic/prestige, as well as a non-alcoholic juice pairing, all superbly curated by sommelier and co-owner Máté Boldizsár. Wine mavens should not overlook the juice option: this is a restaurant where fermentation is an art form and these drinks offer a world of depth and surprise. In this form of dining, describing each individual dish would do a disservice to the whole. The experience unfolds like a story: a finely tuned crescendo composed by a vibrantly gifted chef whose authorial voice blends Nordic culinary philosophy, Hungarian – sometimes peasant – traditions, foraged woodland treasures, and top-tier ingredients in a dynamic dance night after night. The menu feels like a whirlwind tour around the regions of Hungary, with names such as “Nyírmeggyes mangalitsa, Szabolcs apple, Csévharaszt juniper, Karcag mutton stew”. Familiar favourites like greasy bread, cabbage pasta or pork trotter stew root the experience in Hungarian soil – but the presentation and flavour are truly world-class. SALT is strongly recommended even for those who approach fine dining and progressive cuisine with caution. Many sceptics found their resistance melting away by the end of the night.
