Brix Bistro

Brix Bistro is a reliable constant on Hévíz’s culinary scene, set on the town’s pedestrian promenade. Though housed within the four-star Bonvital Hotel, it operates independently of the in-house Apetite Restaurant, which caters to hotel guests. The name Brix hints at the restaurant’s industrial design, reflected in tiled and raw brick walls, factory-style lighting, and violet seating. This being Hévíz, the menu comes in Russian too but this isn’t a simple tourist menu. Rather than settling for safe hotel fare, Brix takes pride in its roots, and the flavours of Zala and Lake Balaton are given star billing. This is gourmet cuisine made accessible, drawing on delicacies from local producers. A lángos starter with Balaton cheese, caviar and mangalitsa elevates the humble beach snack into something more refined. Seasonality is taken seriously: the summer soups include a rarely seen chilled green pea soup, bright with mint and parsley, and a cold watermelon soup made gazpacho-style with tomato and cucumber, topped with crumbly urda, a Transylvanian fresh cheese. One main – veal liver with sage-infused apple purée and golden-crisp potato dumplings – showed both creativity and care, even if the liver was a touch too firm. The dumplings were light and well-browned, and the purée aromatic and balanced. Dessert brought one of the meal’s highlights: airy curd dumplings paired with walnut brittle and a glossy pumpkin seed oil foam. Brix is a solid choice in Hévíz.
