The restaurant’s core mission is to celebrate the flavours, producers, and wines of the Mátra region, showcasing them on a contemporary gastronomic stage. The elegant, tastefully designed interior exudes comfort. The well-curated bistro menu confidently embraces Hungarian culinary traditions and Mátra’s local ingredients, featuring mushrooms, game, trout, and offal. A mix of modern and rustic influences adds a touch of playfulness—“mátrai borzaska” - a pork cutlet in a grated potato crust - comes with mashed potato infused with truffle oil, gomolya cheese, and pickled red onion. A bold choice in such a refined setting is the duck gizzard with heart, served alongside egg spätzle and salad. The offal and soft spätzle arrive in a metal pan, though the heat is less kind to the accompanying greens. The house-made apricot jam is the highlight of the Kaiserschmarrn, though the exterior lacked the expected crispness, and the vanilla foam rapidly lost its structure. The international wine selection is particularly strong, with an extensive range of sparkling wines and champagnes. By the glass, BoriMami’s own Mátra-label wines take centre stage. The tea menu is inviting, complete with descriptions of each tea’s effects. The neighbouring Portéka—BoriMami’s own deli, café, and wine bar—is well worth a visit.
