“És Társai” (literally “and Co”) might sound like an accountancy firm, but here Husleves (Meat soup) is the boss. Owner László Varga is a devoted meat soup aficionado and his eatery is based on one simple principle: to serve soul-soothing, home-made soups cooked with care. Each day brings five or six soups, a few hearty mains, and a short list of pancakes – and that’s the entire menu. Just like at Grandma’s, the soups are ladled into jars brimming with tender meat and rich garnishes. Forget the telltale taste of cheap bouillon powders – this is proper cooking, where classics like chicken or gizzard stew with nokedli (a kind of Hungarian spaetzle), potato pasta, or paprika potatoes taste exactly as they should. The pancakes are the classic, paper-thin Hungarian kind, lavishly filled.
