ISZKOR - Mályinka

Ádám Pohner started afresh in Borsod, in the picturesque village of Mályinka, home to just 450 happy souls. Iszkor offers one of the most compelling culinary experiences—a true auteur kitchen—one that has clearly found its appreciative audience despite its remote location. Far from any urban centre, it is a dining destination to drive to. The wooden-floored terrace offers seating inside a bubble tent in cold weather. The interior is not overly modern—wood panelling and boldly painted blue walls, but the fresh flowers on the tables create a cosy, homely feel. Even the washrooms are packed with thoughtful touches. A strong sense of authenticity fuels the entire establishment—from the unpretentious decor and clear communication to the carefully composed dishes. The team regularly shares updates on their local sourcing, and the kitchen’s transparency is evident in the small details. When the promised Lillafüred carp fish dumpling in an Asian-style fish soup turned out to be made with trout instead, the server promptly informed guests—a sign of integrity. These things happen when you don’t work with mass produced ingredients. Their layered savoy cabbage dish is made with Gesztely mangalitsa pork and cream from Jersey cows in Szuhafő. The rustic, glistening one-pot dish comes in a rice-free version, brightened with spring onion and rocket. The balance between cabbage and meat is spot on, with the cabbage’s flavour taking centre stage rather than being overpowered by the meat and seasoning. A well-composed dish—only the bitterness of the buckwheat detracting slightly. The wine list focuses on regional selections, and the staff are knowledgeable. Iszkor is a true “must-see, must-taste” destination in the area—a boundless celebration of cuisine in Bükk.
