Kardos Supreme BorBistro

On the main street of Mád, a simple gate marked Kardos lets you know you have arrived at the Kardos Winery’s wine bistro. The garden feels more like visiting friends than dining out. You can happily sip a spritzer made with excellent wine at one of the brightly painted outdoor tables. Inside, things get a bit more polished: the space has a clean, modern look, while wooden beams, wrought iron furniture and wine racks bring a rustic charm. The service stands out. It is warm, attentive, and truly exemplary. The chalkboard menu, topped with the phrase “Cooked for You!”, lists the day’s offerings. The food is creative without being overcomplicated. Chef Attila Solymosi clearly knows his craft and chooses his techniques well. The kitchen shines when it comes to meat: the beef cheek, cooked for 36 hours, is packed with flavour, the sous-vide pork neck is nicely seared, and the sides are seasonal and thoughtfully paired. Our beef tartare, made from aged local Angus, was spot-on, with the meat’s character shining through. The emu and foie gras pâté might sound surprising, but it was tasty, well-seasoned, and balanced.The perfectly cooked pike-perch fillet came with a lukewarm marrow stew, where the vegetables were still slightly crisp and the dill gave a fresh touch without overpowering. The wine list features around 80 label. About half are Kardos wines, while the rest come from a well-curated selection of local producers, including some exciting older vintages. Only a handful are available by the glass. The modest exterior hides an excellent restaurant, one of the best choices in Tokaj.
