From the name alone, you might expect a tourist trap csárda, offering kitsch, clichéd Hungarian fare to oblivious foreigners. But don’t judge a book by its cover. While the focus is indeed on traditional Hungarian cuisine, the kitchen delivers it with a modern flair and outstanding quality. Marischka is nestled beneath a contemporary apartment block on the Buda side, near the leafy expanse of Vérmező. The terrace spills out onto a broad, tree-lined path, while the interior echoes the greenery outside: fern fronds hang from the ceiling, and earthy greens and browns dominate the space. A large bar sits at the centre, surrounded by marble-patterned tables, rattan armchairs and lush plants—creating a palm house feel with cosmopolitan charm. The menu is accessible and familiar, presenting reimagined classics in a clear and modern format. There’s an impressive range of starters—from Jewish eggs to goat’s cheese cream with fig chutney, and even roasted marrow bones. These are dishes that speak straight to the Hungarian soul: rich beef broth, homemade blood sausage, beef rib-eye with crispy onions, and even vegetable stews, paired with vegan toppings such as falafel. These aren’t “reinventions”, but the side dishes often show thoughtful creativity. The French onion soup arrives with theatrical flair, served with a layer of puff pastry baked directly onto the bowl—you pierce it to reach the steaming soup beneath. The drinks list is particularly strong, making Marischka worth visiting even just for a glass or two—which nicely justifies the array of small plates and starters. Marischka offers a warmly modern take on Hungarian hospitality.
