Rutin is the resurgent venture of Dávid Pallag and his wife, Fanni, who now run it as a two-person operation under a renewed concept. Open three evenings a week, it fills up without fail – testament to how their new direction is resonating. Housed in a former pub, the space has been reimagined as a gourmet restaurant, while the chef’s style remains refreshingly unrestrained: he moves fluidly between fine bistro and fine dining. What emerges is clearly the work of a meticulous hand – consistent, confident, and full of joy. Even the menu tells a story, whether through a reimagined retro cheesy cream horn or a dish recalling Granny Ica’s grilled chicken. The restaurant is a true collaboration. Fanni curates the wines – and has recently raised the bar significantly, matching each dish with sharp, well-judged pairings. Over several menu changes, we sampled multiple tasting menus at this Budaörs gem with countless highlights. The meal opens with wistful echoes of childhood bacon-roasting rituals, delivered with a classic French utensil ( but, no spoilers, we keep you the surprise). That cheese horn? Dreamily light, filled with a fresh, surprising mixture far from the claggy canteen versions. A seasonal vegetable stew is often on the menu – reworked in texture and form – so it’s a delight when what arrives is, essentially, potato stew with pork, elevated by undeniable finesse. Booking weeks in advance is now a must – clear proof that the reinvented Rutin has found a triumphant rhythm. A true hidden gem of the Hungarian dining scene.
