Zelna Borbisztró is the beloved brainchild of a young couple who left behind the bustle of Budapest to start an organic winery near Balatonfüred. Their bistro began life as a wine bar showcasing their own vintages. But the project grew steadily to include wines from friendly neighbouring cellars—and the bistro has quietly established itself as one of the region’s standout dining spots. You’ll recognise the modern, minimalist building in an instant on Zákonyi Promenade with its covered terrace and smart, wine-bar-style interior. Though you’re still welcome to stop in just for a glass of wine, it would be criminal to miss out on the food. A classic of the tapas world—breaded blood sausage—arrives here with foie gras, truffled cauliflower and cabbage, a testament that this kitchen never settles for the obvious. It’s complex, imaginative, and delicious: a refined take on the traditional Hungarian pairing of sausage and cabbage, elevated by gourmet elements. An unforgettable dish. Zelna’s fish soup is light and elegant, a far cry from the usual Hungarian version. The broth is clear and subtly flavoured, revealing a blend of multiple fish and enriched by a snow-white fillet of catfish, perfectly poached and holding its shape. In another dish—catfish with Jerusalem artichoke, beurre blanc and chive oil—the fish is soft and succulent, the sauce silky and restrained, allowing the fish to shine. The Jerusalem artichoke, carved into miniature gnocchi, is a clever and delicate side. Amid Balatonfüred’s overabundance of restaurants, Zelna is an effervescent exception thanks to its original and beautifully executed kitchen.
